Have you ever stopped to think why some things are really sour while some have no such taste? Scientists have a special metric for how sour or not sour something is. We use the term “pH” to describe this measurement. It's this secret number that gives us information about the world we see!

The pH scale is basically a special ruler that measures from 0 to 14. Something with a number near 0 is extremely sour. Things that have numbers around 14 aren’t sour at all. A number square in the middle at 7 indicates it’s just so — not so sour and not so not sour.

A Guide to Accurate pH Measurement

Now, let us look into some funny examples! Lemon juice is very acidic, so it has a low pH number, such as 2. You might do something funny with your face when you first taste the lemon, as it is so sour! Baking soda is different. Its pH number, like 9, tells you that it is no sour at all. For example, you may use baking soda when helping your parents bake cookies.

In many cool places, pH matters! On farms, farmers rely on pH to know which plants will thrive in their soil. Some plants prefer dirt that’s a little sour, and some prefer dirt that’s not sour. It’s as if every single plant comes with its own secret soil ingredient!
